Whole Wheat Chocolate Chip Banana Muffins



I wanted to make these tasty looking muffins when I first saw them on my friend Melanie's blog. Then again when I saw a healthier "tweaked" version on Kristi's blog. Then Jessica mentioned she had made them and they were delicious.

So I busted out the baking ware and made some for my little family. (No chocolate chips for Mr. Milk Allergy's muffins) They were scrumptious.

And, bonus, they looked so pretty again my vintage napkins. Yum Yum. Double the recipe and freeze so you always have healthy snacks for the park.

Whole Wheat Banana Chocolate Chip Muffins
(from King Arthur Flour Whole Grain Baking)

1/2 cup butter (1 stick or 4 ounces)
1/2 cup packed light or dark brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla extract
1 1/2 cups mashed ripe banana (about 3 bananas)
1/4 cup honey
2 large eggs
2 cups whole wheat flour
2/3 Cups chocolate chips
Preheat the oven to 350. Line or grease a 12 cup muffin pan. 
Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg, and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and chocolate chips, stirring until smooth. Divide batter into the muffin cups, they’ll be nearly full. Bake the muffins until a cake tester inserted in the center of one comes out clean, 23-28 minutes. Remove from oven and after a couple of minutes transfer the muffins to a rack to cool.

I am soooo owning this stay at home mom thing. 
(We won't talk about fourth of July weekend when one day the kids had french fries for two meals and a late night snack. All from different fast food establishments. Oh, the shame.)

I have a huge sack of whole wheat flour I've been trying to figure out how to use, a bunch of overripe bananas, AND a bag of chocolate chips that could use a more creative purpose than cookies again. Thanks for this timely post!!!

Thanks for the recipe! I'm going swimming today and was trying to think of something yummy to take. Perfect. Also... french fries... my boys new favorite, homemade baked sweet potatoe french fries. Easy, chop, bake in a non stick pan in oven... done.

I have also sub'd the flour for whole wheat flour. And...sometimes when I am out of yogurt I have used sour cream. 3days ago I made them and had no sour cream or yogurt so I thought...why not try cottage cheese! So I did and still amazing, moist, and still adding some dairy to my kids diet.

My little one is allergic to milk also and I found that Ghiradelli's semi-sweet chocolate chips do not have milk in them. They are made on equipment that also makes products that contain milk. I get those at albertsons. We also get enjoy life semi-sweet chocolate chips that are completely free of dairy, nut and soy free and made in a dedicated nut-and gluten free facility. They are a little bit more a bag but my son was sooo thrilled the 1st time he go to eat chocolate. I have gotten those at Wal-Mart. They also have chocolate bars by the same company. We like to keep those around in the pantry also.
