Summer Sunday Meals

We love to eat outside in the summer. Especially since we moved to Boise. 95 degrees here is nothing. Dry and mosquito free. 

(Don't worry Tennessee. I'll be pining for you come Fall.)

Sunday's are our big dinners. At least in the summertime. 
This meal was especially easy, and especially delicious. 

Roasted acorn squash. Follow this technique and you can't go wrong.
Rotisserie chicken. Did you know you can reheat it in the oven quite well? Or you could roast your own chicken if you are Ina Garten or something.
Tomato, basil and fresh mozzarella caprese salad. Ah, the joy of an herb garden.
Artisan bread. Served with balsamic vinegar and extra virgin olive oil.




Verdict? 

Lydia...YUM!
Shane...YUM!
Natalie....YUM!
Collin....I'll wait for dessert.
(He did eat the chicken and bread.)

Wondering what to do with all that spaghetti squash from your bountiful baskets this week?
I whipped up a little something and it turned out pretty good.
I used this recipe, but I used kalamata olives, parmesan cheese and some grilled veggies thrown in for good measure. Bacon with it would be awesome. But I only had leftover chicken.

Add a bit of bread and watermelon and you're set.

Verdict?

YUM!!!! How do you like Bountiful Baskets? Is it worth the money and effort?

It's great! The price is very low for what you get, and it's fun to take the kids along. Highly recommend.
