
Today was a good day. Shane took Collin after his 6:30am feeding and I slept in until his next feeding at 9:30. Soon after, Lydia and Shane brought me breakfast in bed. (Shane's thing could definitely be that he is an artist. Or an incredible father. Check out yesterday's masterpieces.) After breakfast, Shane and Lydia went to the store and I leisurely got ready, read, played with the baby. Then I took a 3 hour nap.
With that kind of sleep under my belt, I felt like doing something fun. So I decided to cook. Really cook. I wanted to use everything the farmer's market had to offer. After several hours we sat down to dinner. Mexican Soup and Homemade salsa. That accounted for well over an hour just in dicing vegetables. Oh, did I mention that I made the chicken stock from scratch. Boo Yeah.

Dessert was the kicker though. I wanted to use a huge basket of peaches before they were overripe, so I thought I would stew them in sugar and serve them warm over ice cream. Then I had a culinary epiphany. Basil. How delicious if I heated the peaches with fresh basil. I may have come across the most perfect summer dessert ever. I may buy an ice cream maker to make myself some basil infused peach ice cream.
Yeah. I'm freaking awesome.
On a side note - people ask me all the time what kind of camera I use. To be honest, I have a very humble, 4 year old Canon Powershot SD400. I have just practiced with it a lot. I am desperate for a new camera. Something more like this. Maybe then photography could be "my thing".

Yup...you're awesome. I'm tired just thinking about what all went into that meal. I'm about to have tomatoes up the wazooooo...you're welcome to whatever as long as I get fresh salsa in return!!!!!!!
I have lots of basil in my garden. Maybe I'll try a yummy peach dessert, although I think you have better peaches down there than we do here right now.l
Wow thanks for the peach idea! Guess what I have growing on my deck? Lemon basil! It smells and tastes like lemonade. This would great on those warm peaches and ice cream. Love your blog, glad I found it.
